1 cup shelled edamame (fresh or frozen)

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1/2 cucumber, diced

1/4 red onion, thinly sliced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

2 tablespoons extra virgin olive oil

Salt and pepper, to taste

1/4 teaspoon red pepper flakes (optional for a bit of heat)

Prepare the Edamame: If you're using frozen edamame, bring a small pot of water to a rapid boil. Add the shelled edamame and cook for approximately 3 to 5 minutes, or until tender. Once cooked, drain well and rinse under cold running water to stop the cooking process. For fresh edamame, just shell them and set aside.

    Combine Salad Ingredients: In a large mixing bowl, carefully combine the cooked (or fresh) edamame, diced avocado, halved cherry tomatoes, diced cucumber, and thinly sliced red onion. Ensure the ingredients are mixed gently to retain the integrity of the avocado.

      Make the Dressing: In a separate small bowl, whisk together the juice of one lime, extra virgin olive oil, and season with salt, pepper, and red pepper flakes (if you want a little kick). Mix thoroughly until the dressing is well blended.
