2 ripe avocados, halved and pitted

2 cups cooked chicken, shredded (using rotisserie chicken is fantastic)

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1 small red onion, finely chopped

1 jalapeño, seeded and diced (optional for added spice)

1/2 cup fresh cilantro, chopped

Juice of 1 lime

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and pepper, to taste

4 large flour tortillas

2 tablespoons olive oil (for cooking)

Sour cream and salsa, for serving

Prepare the Avocado Mixture: In a medium-sized mixing bowl, scoop the flesh from the avocados and mash it with a fork until smooth. Add the fresh lime juice, garlic powder, ground cumin, and season with salt and pepper. Mix well until the avocado mixture is creamy. Gently fold in the chopped cilantro and set the mixture aside.

    Combine the Filling Ingredients: In another separate bowl, combine the shredded chicken, finely chopped red onion, diced jalapeño (if you're using it), mozzarella cheese, and cheddar cheese. Season this mixture with a pinch of salt and pepper to enhance the flavors, and stir until well blended.

      Assemble the Quesadillas: Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Once the oil is hot, place one flour tortilla in the skillet. Spread half of the avocado mixture evenly on top of the tortilla. Next, layer half of the chicken and cheese mixture over the avocado layer. Top with a second tortilla.

        Cook the Quesadilla: Let the quesadilla cook for about 3-4 minutes, or until the bottom tortilla is golden brown and you can see the cheese beginning to melt. Using a spatula, carefully flip the quesadilla over, then add another tablespoon of olive oil to the skillet. Cook the second side for another 3-4 minutes, or until it becomes golden and crispy as well.

          Repeat the Process: Remove the cooked quesadilla from the skillet and cover it with a clean kitchen towel to keep it warm while you repeat the process with the remaining tortillas and filling.

            Serve and Enjoy: Once all quesadillas are cooked, use a sharp knife to cut each one into wedges. Serve them warm, accompanied by bowls of sour cream and salsa on the side for dipping.
