Ingredients

12 large cremini or portobello mushrooms, stems gently removed

1 cup cream cheese, softened to room temperature

1/2 cup grated Parmesan cheese

1/2 cup cooked and crumbled Italian sausage (or a savory plant-based sausage)

1/4 cup breadcrumbs (opt for panko for added crunch)

2 cloves garlic, minced

1 tablespoon fresh parsley, finely chopped (optional, for garnish)

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional, for a spicy kick)

Salt and freshly cracked black pepper to taste

Olive oil spray for a delightful finish

Instructions

Prepare the Mushrooms: Begin by gently cleaning each mushroom with a damp cloth to remove any dirt. Carefully remove the stems, setting them aside to chop them up for later use or discard them.

Make the Filling: In a mixing bowl, combine the softened cream cheese and grated Parmesan cheese. Add the cooked and crumbled sausage, panko breadcrumbs, minced garlic, chopped parsley (if using), dried oregano, red pepper flakes (if desired), and a pinch of salt and pepper. Mix thoroughly until the mixture is creamy and well combined.

Stuff the Mushrooms: Using a spoon, take a generous amount of the filling and carefully stuff each mushroom cap, ensuring to press down slightly so the filling adheres well to the mushroom.

Preheat the Air Fryer: Preheat your air fryer to 350°F (175°C) for approximately 3-5 minutes. This step ensures that your mushrooms start cooking evenly from the moment they are placed inside.

Cook the Stuffed Mushrooms: Arrange the stuffed mushrooms in the air fryer basket, making sure to leave a little space between each one to allow for even cooking. Lightly spray the tops of the stuffed mushrooms with olive oil, which will help achieve a delicious golden color.

Air Fry Them: Cook the mushrooms in the air fryer for 10-12 minutes, or until they are golden brown and the filling starts to bubble enticingly.

Serve and Enjoy: Carefully remove the stuffed mushrooms from the air fryer and let them cool for about one minute before serving. Plate them beautifully and, if desired, garnish with a sprinkle of fresh parsley for a pop of color and flavor.

Prep Time, Total Time, Servings: 15 minutes | 25 minutes | Serves 4 delightful portions.
