Ingredients

1 lb (450g) beef sirloin, thinly sliced against the grain

2 cups broccoli florets

1 bell pepper (red or yellow), thinly sliced

3 cloves garlic, minced

1 inch fresh ginger, grated

3 tablespoons soy sauce (or tamari for a gluten-free option)

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided

1 teaspoon sesame oil

2 green onions, sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

Salt and pepper, to taste

2 cups cooked rice or quinoa (for serving)

Instructions

Prepare the Marinade: In a medium-sized mixing bowl, combine the sliced beef with soy sauce, oyster sauce, and cornstarch. Toss the beef until it's evenly coated in the marinade. Allow it to marinate for about 10 minutes at room temperature to absorb the flavors.

Cook the Rice/Quinoa: If you haven’t done so already, cook the rice or quinoa according to the instructions on the package. Aim to have this ready by the time you finish the stir-fry.

Heat the Pan: Place a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil. Allow the oil to heat until it shimmers.

Stir-Fry the Beef: Carefully add the marinated beef to the skillet in a single layer. Leave it unperturbed for about 2 minutes to get a good sear, then stir-fry for an additional 2-3 minutes until the beef is browned and cooked through. Once done, remove the beef from the skillet and set it aside on a plate.

Sauté the Vegetables: Using the same skillet, pour in the remaining tablespoon of vegetable oil. Add the broccoli florets and sliced bell pepper. Stir-fry these for approximately 3-4 minutes, ensuring they remain tender but still crisp.

Add Aromatics: Lower the heat slightly and introduce the minced garlic and grated ginger to the vegetables. Stir-fry for an extra 1-2 minutes, allowing the aromas to bloom without burning.

Combine & Finish: Return the cooked beef to the skillet with the sautéed vegetables. Drizzle with sesame oil and stir everything together until heated through, ensuring the beef and veggies are well mixed. Adjust seasoning with salt and pepper to taste.

Serve: Spoon generous portions of the beef and broccoli mixture over a bed of your cooked rice or quinoa. Finish by garnishing with sliced green onions and a sprinkle of sesame seeds for an appealing crunch.
