Ingredients

For the Sweet Potato Topping:

2 large sweet potatoes, peeled and diced

2 tablespoons unsalted butter

1/4 cup milk (or non-dairy alternative)

Salt and pepper, to taste

1 teaspoon ground cinnamon (optional)

For the Filling:

1 pound ground turkey

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium carrots, diced

1 cup green peas (fresh or frozen)

1 cup corn (fresh or frozen)

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 cup chicken or vegetable broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

Olive oil, for cooking

Instructions

Prepare the Sweet Potato Topping:

    - Begin by bringing a large pot of salted water to a rolling boil. Carefully add the diced sweet potatoes and cook them for about 15-20 minutes, or until they are fork-tender.

      - Once cooked, drain the sweet potatoes and return them to the pot. Add in the butter, milk, salt, pepper, and cinnamon (if desired). Mash the mixture until it is smooth and creamy, then set aside to cool slightly.

        Cook the Filling:

          - Heat a drizzle of olive oil in a large skillet over medium heat. Add the chopped onions and minced garlic. Sauté for about 3-4 minutes, or until the onions become translucent and fragrant.

            - Next, add the ground turkey to the skillet, breaking it apart with a spatula. Cook the turkey until it is nicely browned, approximately 6-8 minutes.

              - Incorporate the diced carrots, green peas, and corn into the mixture, cooking for an additional 5 minutes until the vegetables are tender.

                - Stir in the tomato paste, Worcestershire sauce, chicken broth, thyme, rosemary, salt, and pepper. Mix well and bring the filling to a gentle simmer. Allow it to cook for about 10 minutes for the flavors to meld and the sauce to thicken slightly.

                  Assemble the Pie:

                    - Preheat your oven to 400°F (200°C).

                      - In a baking dish, evenly spread the turkey and vegetable filling at the bottom. Spoon the sweet potato mash over the top, carefully spreading it out to completely cover the filling. Optionally, use a fork to create a decorative pattern on the sweet potato.

                        Bake:

                          - Place the assembled baking dish in the preheated oven and bake for 25-30 minutes, or until the top is slightly golden and the edges are bubbling along the sides.

                            Serve:

                              - Once baked, allow your shepherd's pie to rest for a few minutes before serving to let the flavors settle. Enjoy your delicious Turkey & Sweet Potato Shepherd's Pie alongside a refreshing side salad or your choice of steamed vegetables!
