Ingredients

1 lb ground beef

1 lb ground pork

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon dried Italian herbs (such as oregano, basil, and thyme)

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup fresh parsley, chopped (for garnish)

For the Sauce:

1 cup honey

1/2 cup soy sauce

1/4 cup ketchup

2 cloves garlic, minced

1 teaspoon garlic powder

1/2 teaspoon red pepper flakes (optional, for a spicy kick)

1 tablespoon apple cider vinegar

Instructions

Prepare the Meatball Mixture: In a large mixing bowl, add the ground beef and ground pork. To this, incorporate the breadcrumbs, grated Parmesan cheese, and the large egg. Then, fold in the minced garlic, dried Italian herbs, salt, and black pepper. Mix gently with your hands or a spoon until just combined, being careful not to overmix.

Shape the Meatballs: Take small portions of the mixture and roll them into 1-inch meatballs. Arrange the formed meatballs on a baking sheet lined with parchment paper. This will facilitate easy transfer to the slow cooker later.

Craft the Honey-Garlic Sauce: In a medium-sized bowl, whisk together the honey, soy sauce, ketchup, minced garlic, garlic powder, red pepper flakes (if desired for heat), and apple cider vinegar until the mixture is smooth and well combined.

Combine Meatballs and Sauce in Crockpot: Carefully place the shaped meatballs into the crockpot. Pour the honey-garlic sauce over the meatballs, making sure they are all evenly coated in the delicious sauce.

Cook the Meatballs: Cover the crockpot and cook on low for 6-8 hours, or on high for 3-4 hours. The meatballs should be tender and fully cooked when you check them at the end of the cooking time.

Serve: Once the meatballs are ready, gently stir them in the sauce to ensure they are re-coated before serving. Serve hot, garnished with chopped fresh parsley. These meatballs can be enjoyed over a bed of rice or pasta, or as a delightful appetizer skewered with toothpicks.

Presentation Tips: For an attractive serving, plate the meatballs over a bed of fluffy rice or al dente pasta, drizzle additional sauce over the top, and garnish with a sprinkle of fresh parsley. Consider using colorful skewers if serving as appetizers to enhance visual appeal. Enjoy!
