Ingredients

1 lb ground turkey

1 large sweet potato, peeled and diced into small cubes

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon cayenne pepper (adjust according to your spice preference)

Salt and black pepper, to taste

8 corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

½ cup crumbled feta or cotija cheese

1 ripe avocado, sliced

Fresh cilantro, for garnish

Optional: lime wedges for serving

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper for easy clean-up.

Roast the Sweet Potatoes: In a medium bowl, toss the diced sweet potatoes with olive oil, a sprinkle of salt, black pepper, and half of the ground cumin. Spread the seasoned sweet potatoes evenly on the prepared baking sheet. Roast them in the preheated oven for about 20-25 minutes, or until they turn tender and golden brown, stirring halfway through for even cooking.

Cook the Turkey: While the sweet potatoes are roasting, heat a splash of olive oil in a large skillet over medium heat. Once the oil is shimmering, add the diced onion. Sauté for 3-4 minutes until the onion is soft and translucent. Then, add the minced garlic and cook for an additional minute, stirring frequently to prevent burning.

Season and Brown the Turkey: Add the ground turkey to the skillet with the onions and garlic. Use a wooden spoon to break the meat apart and cook, stirring occasionally, until browned and cooked through—this should take about 5-7 minutes. Sprinkle in the chili powder, smoked paprika, remaining cumin, cayenne pepper, salt, and black pepper. Stir everything together well and allow the mixture to cook for another 2 minutes, letting the spices fully integrate.

Assemble the Tacos: Warm the tortillas in a dry skillet over medium heat or in the microwave until they are pliable. On each tortilla, layer a generous spoonful of the spicy turkey mixture, followed by a handful of roasted sweet potatoes, shredded lettuce, diced tomatoes, avocado slices, and a sprinkle of your choice of cheese.

Garnish and Serve: Top each taco with fresh cilantro. For a zesty finish, serve with lime wedges on the side to squeeze over the tacos as desired.
