2 cups cooked jasmine rice (preferably day-old for better texture)

1 cup frozen sweet peas

3 tablespoons soy sauce

2 tablespoons oyster sauce (optional, for added depth)

2 tablespoons sesame oil

2 tablespoons vegetable oil

3 cloves garlic, minced

1 small onion, diced

2 green onions, sliced (white and green parts separated)

2 large eggs, beaten

1 teaspoon fresh ginger, minced

Salt and black pepper to taste

Fresh cilantro for garnish (optional)

Lime wedges for serving (optional)

Instructions
 

Prepare the Ingredients: Begin by ensuring your shrimp are cleaned and deveined. For the best texture, it's recommended to use day-old rice, as it’s drier and prevents clumping in the dish.

    Heat the Wok: Place a large wok or skillet over medium-high heat and add 1 tablespoon of vegetable oil. Once the oil is hot, add the shrimp, seasoning them lightly with salt and black pepper. Sauté the shrimp for about 2-3 minutes, or until they turn pink and opaque. Once cooked, remove the shrimp from the wok and set them aside to keep warm.

      Sauté Aromatics: In the same wok, pour in another tablespoon of vegetable oil. Add the diced onion along with the minced garlic, stirring for around 2 minutes until they become fragrant and the onion turns translucent. Incorporate the minced ginger into the mix and cook for an additional minute to release its flavor.

        Add Peas & Eggs: Stir in the frozen sweet peas, cooking for another 2 minutes until they are thoroughly heated. Push the pea and aromatics mixture to one side of the wok. On the opposite side, pour in the beaten eggs and scramble them until cooked through. Once scrambled, combine the eggs with the pea mixture.

          Incorporate Rice: Add the cooked jasmine rice to the wok, using a spatula to break up any clumps that may have formed. Carefully fold everything together, ensuring that the rice, vegetables, and shrimp are evenly mixed throughout.
