Savory Lentil and Vegetable Soup

1 cup green or brown lentils, rinsed and drained

2 tablespoons olive oil

1 medium onion, finely diced

2 cloves garlic, minced

2 medium carrots, peeled and diced

2 stalks celery, diced

1 medium zucchini, diced

1 red bell pepper, diced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon turmeric

1 teaspoon dried thyme

6 cups vegetable broth

1 can (14.5 oz) diced tomatoes, undrained

2 cups fresh spinach or kale, chopped

Salt and pepper to taste

Juice of 1 lemon (approximately 2 tablespoons)

Fresh parsley or cilantro, chopped, for garnish

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Once hot, add the finely diced onion. Sauté for about 5 minutes, or until the onion becomes translucent, stirring occasionally to ensure even cooking. Incorporate the minced garlic and continue to sauté for another minute, allowing the garlic to release its aromatic fragrance without burning.

    Add Vegetables: Stir in the diced carrots, celery, zucchini, and red bell pepper. Sauté these vegetables for approximately 5 to 7 minutes, stirring occasionally, until they begin to soften and develop a little color.

      Season: Sprinkle in the ground cumin, smoked paprika, turmeric, and dried thyme. Stir well and let the spices cook for an additional minute to enhance their flavors by toasting them slightly.

        Combine Lentils and Broth: Add the rinsed lentils to the pot, followed by the vegetable broth and the can of diced tomatoes (including their juices). Stir everything together so that the ingredients are evenly distributed.
