1 cup green or brown lentils, rinsed and drained

4 cups vegetable broth

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

2 medium carrots, diced

2 stalks celery, diced

1 bell pepper, diced (any color)

1 cup peas (fresh or frozen)

2 tablespoons tomato paste

1 tablespoon soy sauce or tamari

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

4 medium potatoes, peeled and cubed

1/4 cup milk (dairy or plant-based)

2 tablespoons butter (or vegan alternative)

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Cook the Lentils: In a medium saucepan, combine the rinsed lentils with the vegetable broth. Bring the mixture to a boil over high heat. Once boiling, reduce the heat to low, cover, and let it simmer for about 25-30 minutes, or until the lentils are tender. If there is excess liquid after cooking, drain it and set the lentils aside.

    Sauté the Aromatics: In a large skillet, pour in the olive oil and heat it over medium heat. Add the chopped onion and sauté for 3-4 minutes, stirring occasionally, until the onion becomes translucent. Then, add the minced garlic and sauté for an additional 1 minute, until fragrant.

      Incorporate the Vegetables: Add the diced carrots, celery, and bell pepper to the skillet with the onions. Cook the mixture for about 5-7 minutes, stirring occasionally, until all the vegetables are tender and vibrant.

        Combine the Filling: Stir in the cooked lentils along with the tomato paste, soy sauce, dried thyme, dried rosemary, salt, and pepper. Add the peas to the mixture and stir well to combine. Allow the filling to cook for an additional 5 minutes, then remove from heat.

          Prepare the Mashed Potatoes: Meanwhile, in a separate pot, add the peeled and cubed potatoes. Cover with water and bring to a boil over high heat. Once boiling, reduce to a simmer and cook for 15-20 minutes, or until the potatoes are fork-tender. Drain the potatoes and return them to the pot.

            Mash the Potatoes: To the drained potatoes, add the milk and butter. Mash the mixture until it reaches a smooth and creamy consistency. Season with salt and pepper to taste for enhanced flavor.

              Assemble the Pie: Preheat your oven to 400°F (200°C). In a large baking dish, evenly spread the lentil and vegetable filling across the bottom. Carefully spoon the mashed potatoes on top of the filling, using a spatula to spread and smooth it out, ensuring the filling is completely covered.

                Bake the Shepherd's Pie: Place the assembled dish in the preheated oven and bake for 25-30 minutes, or until the mashed potatoes become slightly golden and the filling is bubbly around the edges.
