9 lasagna noodles

2 cups fresh kale, chopped (ensure stems are removed)

1 cup pumpkin puree (can be canned or homemade)

1 cup ricotta cheese

1 teaspoon ground nutmeg

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1 cup shredded mozzarella cheese, divided

1/4 cup grated Parmesan cheese

2 cups marinara sauce (preferably store-bought or homemade)

Olive oil, as needed for sautéing

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C) to ensure it's hot and ready for baking.

    Cook the Noodles: In a large pot, fill with water and add a generous pinch of salt. Bring to a rolling boil. Carefully add the lasagna noodles and cook them according to the package instructions until they are al dente. Once cooked, drain the noodles in a colander and lay them out flat on a clean kitchen towel to prevent sticking.

      Sauté the Kale: In a medium skillet, heat approximately one tablespoon of olive oil over medium heat. Add the chopped kale and sauté for 3-4 minutes, or until the leaves are wilted and tender. Once cooked, remove the skillet from heat and allow the kale to cool slightly.

        Prepare the Filling: In a large mixing bowl, combine the pumpkin puree, ricotta cheese, sautéed kale, ground nutmeg, garlic powder, salt, and black pepper. Stir the ingredients together until they are thoroughly mixed. Gently fold in 1/2 cup of the shredded mozzarella cheese for added creaminess.

          Assemble the Roll-Ups: Spread a thin layer of marinara sauce across the bottom of a 9x13 inch baking dish.
