1 cup broccoli florets

1 bell pepper (choose red or yellow), sliced

1 medium zucchini, sliced into half-moons

1 cup snap peas, trimmed

3 tablespoons olive oil, divided

Salt and pepper, to taste

½ cup teriyaki sauce (store-bought or homemade)

2 cups cooked brown rice or quinoa

Sesame seeds, for garnish

Green onions, sliced, for garnish

Preheat the Oven: Set your oven to 400°F (200°C) to ensure it's ready for baking.

    Prepare the Vegetables: In a large mixing bowl, combine the broccoli florets, sliced bell pepper, zucchini, and snap peas.       Prepare the Salmon Fillets: Rinse the salmon fillets under cold water and gently pat them dry with paper towels. Arrange the salmon on the opposite side of the baking sheet from the vegetables.
