1 lb (450g) boneless, skinless chicken thighs, diced into bite-sized pieces

1 can (15 oz) black beans, drained and rinsed under cold water

1 medium red onion, finely diced

2 cloves garlic, minced

1 bell pepper (choose either red or green), diced

1 tablespoon olive oil

2 teaspoons chili powder

1 teaspoon ground cumin

½ teaspoon smoked paprika

¼ teaspoon cayenne pepper (adjust according to your heat preference)

Salt and freshly ground black pepper, to taste

Juice of 1 lime

8 small corn or flour tortillas

Fresh cilantro, chopped, for garnish

Sliced avocado, for serving

Salsa or hot sauce, for serving

Instructions
 

Heat the Oil: In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Cook the Chicken: Carefully add the diced chicken thighs to the skillet. Season with salt, black pepper, chili powder, cumin, smoked paprika, and cayenne. Sauté the chicken for about 5-7 minutes, stirring occasionally, until it is nicely browned and cooked through.
