Ingredients

1 lb (450g) large shrimp, peeled and deveined

4 cups fresh broccoli florets

4 tablespoons olive oil, divided

4 cloves garlic, minced

Zest of 1 large lemon

Juice of 1 large lemon

1 teaspoon red pepper flakes (adjust according to preference)

Salt and freshly ground black pepper, to taste

1/2 teaspoon smoked paprika

2 tablespoons fresh parsley, finely chopped (for garnish)

Cooked rice or quinoa, for serving (optional)

Instructions

Marinate the Shrimp: In a medium mixing bowl, combine the deveined shrimp with half of the minced garlic (2 cloves), smoked paprika, lemon zest, lemon juice, red pepper flakes, and a generous sprinkle of salt and black pepper. Gently toss until the shrimp are thoroughly coated. Cover the bowl and let it marinate in the refrigerator for 15-20 minutes while you prepare the broccoli.

Sauté the Broccoli: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add the broccoli florets to the pan. Sauté them for approximately 4-5 minutes, stirring occasionally, until they turn bright green and are tender yet still crisp. Season with a pinch of salt to taste. Once cooked, transfer the broccoli to a plate and set aside.

Cook the Shrimp: In the same skillet, add the remaining 2 tablespoons of olive oil. Once the oil is hot, add the remaining minced garlic (2 cloves) and sauté for about 30 seconds until it becomes fragrant, being careful not to burn it. Add the marinated shrimp to the pan and cook for 2-3 minutes on one side until they start to change color and turn pink.

Combine and Finish Cooking: Gently flip the shrimp over using a spatula. Return the sautéed broccoli to the skillet, stirring everything together carefully. Cook for an additional 2-3 minutes, until the shrimp are fully cooked through and completely opaque.

Garnish and Serve: Remove the skillet from heat. Sprinkle the mixture with freshly chopped parsley. Taste and adjust the seasoning if necessary. Serve immediately, either over a fluffy bed of rice or quinoa for a hearty meal, or enjoy on its own as a light dish!
