1 cup corn (can be frozen or canned, ensure it's drained)

1 medium onion, finely diced

2 cloves garlic, minced

2 cups beef broth (or vegetable broth for a vegetarian alternative)

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon kosher salt (adjust according to your taste)

1/4 teaspoon freshly ground black pepper

1 cup shredded cheddar cheese (or a blend of your favorite cheeses)

2 tablespoons extra virgin olive oil

Fresh cilantro or parsley for garnish (optional)
