Achieving the perfect sear on your beef is crucial for enhancing the dish's overall flavor and texture. Start by cutting your beef into even-sized strips; this will ensure uniform cooking. Before you begin, make sure your skillet or frying pan is preheated over medium-high heat for at least 5 minutes. A hot pan is key to a good sear.

Ingredients

1 lb (450g) beef sirloin, thinly sliced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided

1 medium onion, sliced

2 cloves garlic, minced

1 bell pepper (your choice of red or green), sliced

1 cup broccoli florets

1 cup snap peas

1 medium carrot, julienned

2 green onions, chopped (for garnish)

Sesame seeds (optional, for garnish)

Salt and pepper to taste

Instructions

Marinate the Beef: In a medium mixing bowl, combine the thinly sliced beef with soy sauce, oyster sauce, and cornstarch. Stir thoroughly to ensure the beef is well-coated. Cover the bowl and allow the beef to marinate for at least 15 minutes. This process enhances the flavor and helps tenderize the meat.

Heat the Pan: In a large skillet or wok, pour in 1 tablespoon of vegetable oil and heat over medium-high heat until the oil shimmers. This indicates that it's hot enough for cooking.

Cook the Beef: Carefully add the marinated beef to the hot pan in a single layer. Avoid overcrowding; if necessary, cook in two batches. Sear the beef for approximately 2-3 minutes until it develops a brown crust on one side. Flip the beef and cook the other side for an additional 2 minutes. Once fully browned, transfer the beef to a plate and keep it warm.

Sauté the Aromatics: In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced onion and minced garlic, sautéing over medium heat for 1-2 minutes until the onion becomes translucent and the garlic is aromatic.

Add the Vegetables: Turn the heat up to high, and add the sliced bell pepper, broccoli florets, snap peas, and julienned carrot into the pan. Stir-fry the vegetables for 4-5 minutes, or until they are vibrant and crisp-tender.

Return the Beef: Once the vegetables are cooked, return the sautéed beef back into the skillet. Toss all the ingredients together, ensuring everything is well mixed. Stir-fry for an additional 2-3 minutes to allow the flavors to meld. Season with salt and pepper to your taste preferences.

Garnish and Serve: Remove the skillet from heat. Garnish the dish with freshly chopped green onions and sprinkle sesame seeds on top, if desired. Serve immediately over a bed of rice or quinoa for a wholesome meal.
