Ingredients

For the Lemon Herb Salmon:

4 salmon fillets (6 ounces each)

3 tablespoons olive oil

2 tablespoons fresh lemon juice

Zest of 1 lemon

3 cloves garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)

Salt and pepper, to taste

Lemon wedges, for serving

For the Garlic Green Beans:

1 pound fresh green beans, trimmed

2 tablespoons olive oil

3 cloves garlic, minced

Salt and pepper, to taste

1 tablespoon lemon juice

1 tablespoon slivered almonds (optional, for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to prepare for baking the salmon.

Make the Marinade: In a small mixing bowl, whisk together the olive oil, fresh lemon juice, lemon zest, minced garlic, chopped dill, chopped parsley, and a pinch of salt and pepper until well combined.

Marinate the Salmon: In a large baking dish, place the salmon fillets skin-side down. Pour the marinade over the fillets, ensuring each piece is generously coated. Allow the salmon to marinate for at least 15 minutes. This step will enhance the flavor while you prepare the green beans.

Prepare the Green Beans: In a large saucepan, bring salted water to a rolling boil. Add the trimmed green beans and blanch them for 2-3 minutes. The beans should become bright green and tender-crisp. After blanching, drain them and immediately transfer to an ice bath to halt the cooking process. Once cooled, drain the beans again and set aside.

Cook the Green Beans: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant. Then, add the blanched green beans to the skillet. Season them with salt and pepper, and sauté for an additional 3-4 minutes. Just before removing from heat, drizzle the lemon juice over the beans and toss to combine.

Bake the Salmon: Transfer the marinated salmon fillets to the preheated oven. Bake for 12-15 minutes, or until the salmon flakes easily with a fork and has reached an internal temperature of 145°F (63°C).

Serve: On a spacious serving platter, arrange the cooked lemon herb salmon fillets next to the sautéed garlic green beans. If desired, garnish the green beans with slivered almonds for added crunch and visual appeal. Serve with lemon wedges on the side for a delightful burst of citrus flavor.

Presentation Tips: For a stunning presentation, consider serving the salmon on a bed of fresh greens, and drizzle any remaining marinade from the baking dish over the salmon for extra flavor and moisture. A sprinkle of fresh herbs can add a splash of color to the dish!
