1 pound large shrimp, peeled and deveined

2 medium zucchinis, spiralized into noodles

4 tablespoons olive oil, divided

4 cloves garlic, minced

Zest and juice of 1 lemon

1/2 teaspoon red pepper flakes (adjust according to your spice preference)

Salt and freshly ground black pepper, to taste

1/4 cup fresh parsley, chopped

1/4 cup grated Parmesan cheese (optional)

Instructions
 

Prepare the Zucchini Noodles: Using a spiralizer or a julienne peeler, transform the zucchinis into long, spaghetti-like strands. Once spiralized, set them aside in a bowl.

    Sauté the Shrimp: In a large skillet, warm 2 tablespoons of olive oil over medium heat. When the oil is shimmering, introduce the minced garlic and red pepper flakes. Sauté for about 30 seconds, allowing the garlic to release its aroma without burning.

      Cook the Shrimp: Add the prepared shrimp to the skillet. Season them generously with salt and freshly ground black pepper. Cook the shrimp for approximately 2-3 minutes on each side, or until they turn pink and opaque. Drizzle in the lemon juice and sprinkle in the lemon zest, tossing everything gently to ensure even coating. Once cooked, remove the shrimp from the skillet and set aside.
