4 whole wheat or spinach wraps

1 cup fresh spinach leaves

1 medium ripe tomato, diced

1/2 cucumber, thinly sliced

1/2 red onion, thinly sliced

1/2 cup crumbled feta cheese (optional)

Tzatziki sauce or your favorite dressing, for drizzling

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the extra virgin olive oil, minced garlic, lemon zest, lemon juice, oregano, thyme, salt, and pepper. Whisk the mixture until it is well blended. Add the chicken breasts to the bowl, ensuring they are thoroughly coated in the marinade. Cover the bowl and place it in the refrigerator for at least 30 minutes, or up to 2 hours for enhanced flavor infusion.

    Preheat the Grill: Heat your grill or grill pan over medium-high heat. To prevent sticking, lightly oil the grill grates using a brush or paper towel with a bit of oil.

      Grill the Chicken: Once the grill is hot, remove the chicken breasts from the marinade, allowing any excess marinade to drip off.
