Ingredients

1 cup rolled oats

1/2 cup almond flour

1/2 cup almond butter (or substitute with peanut butter)

1/4 cup honey or maple syrup

1 teaspoon pure vanilla extract

1/4 teaspoon salt

1/2 cup mini chocolate chips

1 cup Greek yogurt (non-fat or low-fat preferred)

1/4 cup sweetener of your choice (optional, adjust based on yogurt tartness)

Optional Toppings: crushed nuts, shredded coconut, or extra chocolate chips for garnish

Instructions

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, and salt. Use a whisk or spoon to stir well, ensuring that the dry ingredients are evenly distributed.

Combine Wet Ingredients: In a separate bowl, whisk together the almond butter, honey (or maple syrup), and vanilla extract until you achieve a smooth and creamy consistency.

Combine Mixtures: Gradually pour the wet mixture into the bowl containing the dry ingredients. Stir well until fully incorporated. If the mixture appears crumbly and is not holding together, add a splash of water or a little more honey/maple syrup to help bind it.

Add Chocolate Chips: Carefully fold in the mini chocolate chips into the dough mixture with a spatula. If desired, set aside a few chocolate chips for use in the topping later.

Shape the Bites: With clean hands, scoop out small portions of the dough (about 1 inch in diameter) and roll them into balls. Place each ball on a parchment-lined baking tray, making sure they are spaced apart.

Prepare Yogurt Coating: In a small bowl, mix the Greek yogurt with your chosen sweetener (if using). Whisk until the yogurt is smooth and creamy.

Coat the Bites: Gently dip each dough bite into the yogurt mixture, making sure to coat them evenly. Use a fork to lift them out, letting any excess coating drip back into the bowl before placing them back on the parchment-lined tray.

Freeze: Once all the bites are coated, transfer the baking tray to the freezer. Allow them to freeze for approximately 2 hours, or until they are completely firm.

Serve and Enjoy: After freezing, the bites are ready to enjoy. You can eat them as they are or garnish with your choice of toppings like crushed nuts, shredded coconut, or extra chocolate chips. Store any leftovers in an airtight container in the freezer.

Prep Time: 15 minutes | Total Time: 2 hours 15 minutes | Servings: 12-15 bites

                      - Presentation Tips: Arrange the frozen bites on a platter and sprinkle with additional toppings before serving. Use colorful mini cupcake liners for a festive touch!
