Fall Crockpot Sausage and Potatoes

1 pound smoked sausage (such as kielbasa or andouille), sliced into ½-inch rounds

1.5 pounds baby potatoes, halved or quartered (depending on size)

3 medium carrots, peeled and chopped into bite-sized pieces

1 large onion, diced

4 cloves garlic, minced

1 bell pepper (any color), diced

2 cups vegetable or chicken broth

1 tablespoon olive oil

2 teaspoons dried thyme

1 teaspoon dried rosemary

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Vegetables: Wash all vegetables thoroughly. Halve or quarter the baby potatoes, peel and chop the carrots, dice the onion and bell pepper, and mince the garlic. Set them aside to make assembly easier.

    Sauté the Sausage: In a skillet over medium heat, add the olive oil. Once hot, add the sliced sausage to the skillet and sauté for about 5-7 minutes, or until it is nicely browned. Browning the sausage enhances its flavor. After browning, transfer it to your crockpot.
