Ingredients

4 boneless, skinless chicken breasts

1 box (12 oz) of your favorite stuffing mix (cornbread or herb recommended)

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

1 cup fresh cranberries (or dried cranberries if preferred)

1 cup chopped celery (approximately 2 stalks)

1 medium onion, finely chopped

2 cloves garlic, minced

2 teaspoons dried thyme

2 teaspoons dried sage

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: Begin by seasoning the chicken breasts with salt, pepper, thyme, and sage. In a large skillet, heat the olive oil over medium heat. Once hot, add the chicken breasts and sear for 3-4 minutes on each side, or until they develop a beautiful golden-brown crust. This initial searing enhances the flavor of the chicken.

Layer the Crockpot: Lightly coat the inside of the crockpot with non-stick cooking spray to prevent sticking. Start by layering the bottom with the chopped celery, followed by the finely chopped onion and minced garlic. Evenly sprinkle the fresh or dried cranberries over this vegetable base for a pop of flavor and color.

Add the Chicken: Carefully place the seared chicken breasts on top of the layered vegetables and cranberries, ensuring an even distribution.

Mix the Stuffing: In a mixing bowl, combine the stuffing mix with the cream of chicken soup and chicken broth. Stir the mixture gently until just combined, then pour it evenly over the chicken and vegetables in the crockpot. This creates a hearty topping that will soak up all the delicious flavors.

Cook: Cover the crockpot and set it to cook on low for 4-6 hours. The chicken should be cooked through and tender enough to easily shred with a fork when it's done.

Final Touches: Once cooked, use two forks to shred the chicken directly in the crockpot and mix it gently with the stuffing and vegetables for an even distribution. Allow the mixture to sit for about 10 minutes, letting the flavors meld.

Garnish: Before serving, sprinkle freshly chopped parsley on top. This not only adds a touch of color but also enhances the dish with a fresh finish.

Serve: Spoon generous portions of the chicken and stuffing mixture onto plates. This warm, comforting dish is perfect for enjoying the cozy flavors of autumn!
