Easy Turkey and Sweet Potato Chili

1 lb ground turkey

1 medium sweet potato, peeled and diced into 1/2-inch cubes

1 large onion, chopped

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, with juice

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 cup vegetable or chicken broth

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust for heat preference)

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro, chopped, for garnish (optional)

Diced avocado and lime wedges for serving (optional)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Once shimmering, add the chopped onion. Sauté for about 3-4 minutes, or until the onion becomes translucent. Stir in the minced garlic and cook for another 30 seconds, until fragrant.

    Cook the Turkey: Increase the heat to medium-high. Add the ground turkey to the pot. Cook for approximately 5-7 minutes, stirring and breaking the meat apart with a spoon, until it is browned and fully cooked. Season with salt and pepper during cooking.

      Add Sweet Potatoes and Spices: Stir in the diced sweet potato, chili powder, ground cumin, smoked paprika, and cayenne pepper (if using). Mix thoroughly to ensure the sweet potatoes and turkey are well coated with the spices.

        Incorporate Tomatoes and Broth: Pour the can of diced tomatoes, including its juice, and the broth into the pot. Stir to combine and bring the mixture to a gentle simmer.
