1 cup quinoa, thoroughly rinsed

2 cups chicken or vegetable broth

2 tablespoons olive oil

4 cloves garlic, finely minced

1 cup cherry tomatoes, halved

2 cups fresh spinach

1 cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish (optional)

Cook the Quinoa: In a medium saucepan, bring the chicken or vegetable broth to a rolling boil. Add the rinsed quinoa, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa has absorbed all the liquid and is fluffy. Once cooked, remove from heat and let it sit covered for an additional 5 minutes before fluffing with a fork.

    Prepare the Shrimp: In a large, deep skillet, heat the olive oil over medium-high heat. Add the minced garlic and sauté for approximately 30 seconds, or until fragrant. Be careful not to let it burn.

      Cook the Shrimp: Add the shrimp to the skillet, seasoning with salt and pepper. Cook for 2-3 minutes on each side or until the shrimp are pink, opaque, and cooked through. Once done, transfer the shrimp to a plate and set aside.

        Create the Creamy Sauce: In the same skillet, add the halved cherry tomatoes. Sauté them for 2-3 minutes until they begin to soften.
