1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups fresh broccoli florets

1 medium onion, diced

2 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 cup shredded sharp cheddar cheese

2 tablespoons olive oil

1 teaspoon dried Italian herbs (such as oregano, basil, and thyme)

Salt and freshly ground black pepper, to taste

½ cup grated Parmesan cheese

2 cups cooked rice or pasta (for serving, optional)

Instructions
 

Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Season the chicken pieces liberally with salt, pepper, and half of the dried Italian herbs. Once the oil is shimmering, add the chicken to the skillet in a single layer. Cook for approximately 5-7 minutes, turning occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set it aside on a plate.

    Cook the Vegetables: In the same skillet, add the diced onion and minced garlic. Sauté them for 3-4 minutes, or until the onion becomes translucent and fragrant. Next, add the broccoli florets to the skillet, stirring well. Sauté for another 3-4 minutes, allowing the broccoli to cook until it's bright green and retains a tender-crisp texture.

      Make the Creamy Sauce: Pour the chicken broth into the skillet, stirring to combine, and bring it to a gentle simmer. Gradually stir in the heavy cream along with the remaining dried herbs. Allow the sauce to cook for about 2 minutes, letting it thicken slightly.

        Combine Ingredients: Return the cooked chicken to the skillet, ensuring it is evenly distributed. Stir in the shredded cheddar cheese and grated Parmesan cheese, mixing thoroughly until the cheeses have melted and the sauce becomes creamy. Let the mixture simmer together for an additional 5 minutes. Taste and adjust seasoning with additional salt and pepper if necessary.
