Cranberry Maple Glazed Meatloaf

1 pound ground beef

1 pound ground pork

1 cup whole wheat breadcrumbs

1/2 cup onion, finely chopped

1/2 cup celery, finely chopped

1/2 cup bell pepper (red or green), finely chopped

2 cloves garlic, minced

1/2 cup fresh cranberries, roughly chopped (or 1/3 cup dried cranberries)

2 large eggs

1 teaspoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup pure maple syrup

1/2 cup cranberry sauce (homemade or store-bought)

Optional: Fresh parsley, chopped, for garnish

Preheat the Oven: Start by preheating your oven to 350°F (175°C) to prepare for baking.

    Prepare the Meat Mixture: In a large mixing bowl, combine the ground beef and ground pork. Add the whole wheat breadcrumbs, finely chopped onion, celery, bell pepper, minced garlic, and chopped cranberries. Then, crack in the eggs and pour in the Worcestershire sauce. Finally, sprinkle in the dried thyme, rosemary, salt, and black pepper. Mix thoroughly with your hands or a spatula until all ingredients are evenly blended.

      Shape the Meatloaf: Transfer the meat mixture into a parchment-lined loaf pan for easy removal, or shape it into a loaf directly on a baking sheet. Ensure that the loaf is evenly formed to promote even cooking throughout.

        Make the Glaze: In a separate bowl, combine the pure maple syrup and cranberry sauce. Mix until the two have fully blended together to create a smooth glaze. Set aside a small amount of this glaze for drizzling later.

          Glaze the Meatloaf: Generously brush about half of the cranberry maple glaze over the top of the meatloaf, coating it well to lock in moisture and flavor.

              Rest and Serve: After baking, once the meatloaf has reached the desired temperature, remove it from the oven. Allow it to rest for about 10 minutes before slicing. Drizzle the reserved glaze over the top just before serving for a delicious finish. Optionally, sprinkle with freshly chopped parsley for a touch of color and freshness.
