Classic Turkey and Spinach Stuffed Shells

12-16 large pasta shells

1 pound ground turkey

4 cups fresh spinach, washed and chopped

15 ounces ricotta cheese

1 ½ cups moisture-retaining mozzarella cheese, shredded

½ cup grated Parmesan cheese

3 cloves garlic, minced

1 medium onion, finely chopped

1 large egg, beaten

1 teaspoon Italian seasoning

Salt, to taste

Black pepper, to taste

3 cups marinara sauce, divided

1 tablespoon olive oil

Fresh basil leaves, for garnish (optional)

Instructions
 

Prepare the Pasta Shells:

    - In a large pot, bring salted water to a rolling boil. Carefully add the large pasta shells and cook them according to package instructions until they are al dente. Once cooked, drain them in a colander and set aside to cool slightly.

      Cook the Filling:

        - In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and minced garlic, stirring occasionally, until the onion becomes translucent, approximately 3-4 minutes.

          - Then add the ground turkey to the skillet. Cook the turkey, breaking it apart with a spatula for even cooking, until it is browned and no longer pink in the center, approximately 6-8 minutes. If there's excess fat, drain it off.

            Incorporate Spinach and Seasoning:

              - Once the turkey is fully cooked, stir in the chopped spinach and cook just until wilted, about 1-2 minutes. Remove from heat and allow the mixture to cool slightly.

                Combine Filling Ingredients:

                  - In a large mixing bowl, add the turkey and spinach mixture. Incorporate the ricotta cheese, 1 cup of the shredded mozzarella cheese, grated Parmesan cheese, beaten egg, Italian seasoning, and generous pinches of salt and black pepper. Mix thoroughly until all ingredients are well blended.

                    Stuff the Shells:

                      - Preheat your oven to 375°F (190°C). Spread 1 cup of marinara sauce evenly on the bottom of a 9x13-inch baking dish.

                        - Using a spoon, carefully fill each cooked shell with the turkey and spinach mixture, and place them in a single layer in the prepared dish.

                          Top with Sauce and Cheese:

                            - Once all shells are filled, pour the remaining marinara sauce over the stuffed shells, making sure they are well-coated. Finish by sprinkling the remaining mozzarella cheese on top.

                              Bake:

                                - Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Afterwards, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbling and golden brown.

                                  Serve and Enjoy:

                                    - Allow the stuffed shells to cool for a few minutes before garnishing with fresh basil leaves, if desired. Serve warm and delight in this comforting, cheesy dish!
