1 cup quinoa, thoroughly rinsed and drained

2 cups beef broth

1 lb ground beef, preferably lean

2 cups broccoli florets (you can use fresh or frozen)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 small onion, finely diced

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon Italian seasoning blend

Salt and black pepper, to taste

1 tablespoon olive oil

1/2 cup sour cream

1/2 cup milk

Preheat the Oven: Set your oven to preheat at 350°F (175°C).

    Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and beef broth. Bring to a rapid boil over medium-high heat, then reduce the heat to low. Cover the saucepan and let it simmer for about 15 minutes, or until all the liquid is absorbed and the quinoa is fluffy. Once done, remove it from heat and set it aside.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking for about 3-4 minutes, or until the onion becomes translucent and fragrant.

        Brown the Beef: Add the ground beef to the skillet with the sautéed onion and garlic. Season with salt, pepper, paprika, and Italian seasoning. Cook the beef for about 5-7 minutes, breaking it apart with a spatula as it browns, until it's fully cooked. Drain any excess fat.

          Combine the Ingredients: In a large mixing bowl, combine the cooked quinoa, the beef mixture, broccoli florets, sour cream, milk, half of the cheddar cheese, and half of the mozzarella cheese. Stir everything together until well combined, ensuring the broccoli is evenly distributed.

            Transfer to Casserole Dish: Lightly grease a 9x13-inch casserole dish and pour the mixture into it. Spread the mixture evenly in the dish.

              Top with Cheese: Sprinkle the remaining cheddar and mozzarella cheese evenly over the top of the casserole.

                Bake the Casserole: Cover the casserole with aluminum foil and place it in the preheated oven to bake for 25 minutes. After 25 minutes, carefully remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and has developed a light golden color.

                  Serve: Once baked, allow the casserole to cool for a few minutes before slicing it. Serve warm and enjoy the delicious cheesy goodness!
