2 cups broccoli florets (fresh or frozen)

1 cup uncooked long-grain or Jasmine rice

2 cups beef broth

1 cup shredded cheddar cheese

1 cup cream of mushroom soup

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

1/2 cup shredded mozzarella cheese (for topping)

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Cook the Aromatics: In a large skillet, heat the olive oil over medium heat. Once hot, add the diced onion and sauté for 3-4 minutes or until the onion becomes translucent. Stir in the minced garlic and continue to sauté for an additional minute until it becomes fragrant.

    Brown the Beef: Increase the heat slightly and add the ground beef to the skillet. Season with onion powder, garlic powder, paprika, salt, and pepper. Cook the beef while breaking it up with a spatula until it is browned and cooked through. Once done, drain any excess fat from the skillet.

      Combine the Casserole Ingredients: In a large mixing bowl, combine the browned beef mixture with the uncooked rice, broccoli florets, beef broth, and cream of mushroom soup. Stir thoroughly until all the ingredients are evenly mixed, ensuring the rice is well-coated.

        Bake the Casserole: Preheat your oven to 375°F (190°C). Transfer the mixture into a greased 9x13 inch baking dish. Cover the dish tightly with aluminum foil and bake in the preheated oven for 40 minutes, allowing the rice to partially cook and absorb the flavors.
