Autumn Herb Roast Chicken with Root Veggies

Ingredients
  

1 whole chicken (about 4-5 lbs)

2 tablespoons olive oil

1 tablespoon Dijon mustard

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

1 tablespoon fresh sage, finely chopped

2 cloves garlic, minced

Salt and black pepper, to taste

4 large carrots, peeled and chopped into 1-inch chunks

3 medium parsnips, peeled and chopped into 1-inch chunks

2 medium sweet potatoes, peeled and cut into 1-inch cubes

1 red onion, cut into wedges

1 lemon, cut in half

1 cup low-sodium chicken broth

Fresh herbs (such as parsley or more thyme) for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 425°F (220°C). This high temperature will help achieve a beautifully crispy skin on the chicken.

    Prepare the Chicken: Take the whole chicken and pat it dry with paper towels; this is crucial for getting that perfectly crispy skin. In a mixing bowl, combine the olive oil, Dijon mustard, chopped rosemary, thyme, sage, minced garlic, salt, and pepper. Whisk these ingredients together until you have a uniform marinade.

      Season the Chicken: Generously rub the herb mixture all over the chicken, making sure to cover every surface, including inside the cavity. Squeeze the juice of one half of the lemon over the chicken for brightness, and then place the lemon halves inside the cavity for added flavor infusion during roasting.

        Prepare the Vegetables: In a large mixing bowl, toss the chopped carrots, parsnips, sweet potatoes, and red onion with a light drizzle of olive oil, along with a sprinkle of salt and pepper. Make sure the vegetables are well coated, then spread them out evenly in a large roasting pan.
