8 oz (225g) pasta of your choice (penne or fusilli are great options)

1 lb (450g) boneless, skinless chicken breast, diced

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, preferably fire-roasted for added flavor

1 cup heavy cream

1 teaspoon dried basil (or 1 tablespoon fresh basil, chopped)

1/2 teaspoon red pepper flakes (adjust according to spice preference)

Salt and freshly ground black pepper, to taste

1/2 cup grated Parmesan cheese, plus extra for serving

Fresh basil leaves, for garnish

Instructions
 

Cook Pasta: In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to the package instructions until al dente. Once done, drain the pasta and set it aside in a large mixing bowl.

    Sauté Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the diced chicken and season generously with salt and black pepper. Cook for 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set it aside on a plate.

      Cook Aromatics: In the same skillet, add the chopped onion. Sauté for 3-4 minutes or until the onion is softened and translucent. Add the minced garlic to the skillet and sauté for an additional 30 seconds, stirring frequently, until fragrant.

        Add Tomatoes & Cream: Pour in the canned diced tomatoes along with their juices. Then, add the heavy cream, dried basil, and red pepper flakes. Stir the mixture well to combine and bring it to a gentle simmer. Let it cook for approximately 3-5 minutes, stirring occasionally, until the sauce has slightly thickened.

          Combine Chicken & Pasta: Return the sautéed chicken to the skillet. Add the drained pasta to the sauce and toss everything together gently until well-coated. Stir in the grated Parmesan cheese and mix until melted and creamy. Taste and adjust the seasoning with more salt and black pepper if necessary.
